Nightshade Free Guacamole
Chips and guac. Three little words we can’t hear enough. Most guacamole at the market and recipes online use tomatoes or peppers - both of which are members of the nightshade vegetable family. What do we have against nightshades?
While nutritious, nightshades are also known to cause gut inflammation and trigger immune dysfunction. Since we have confirmed sensitivity to nightshades but love guacamole, we put together this night-shade free recipe. Don’t worry! It’s still wonderfully flavorful thanks to the lime juice and garlic. Sound strange? Don’t knock it ‘til you try it. We like to pair this crowd pleaser with our favorite grain-free tortilla chips or crudités - radishes are at the top of our list right now. Add in our spicy margarita and you’ve got yourself a perfect Friday evening.
Nightshade Free Guacamole
SERVINGS 6
INGREDIENTS
3 avocados
1 large lime juiced
3 cloves of garlic minced
1/3 cup of diced red onion
1/4 cup of cilantro
1/2 teaspoon of pink Himalayan salt
Dash of pepper
Method
Cut, slice, pit and peel avocados.
Mash avocados with a masher or fork in a large bowl.
Slice lime in half and squeeze all juice into the bowl.
Add garlic, onion, cilantro, and seasoning. Mix well.
Serve with grain-free tortilla chips or crudités.
Tip
Leftovers? Storing for later? Add a very thin layer of water on top your gaucamole, cover it, and put in the refrigerator. Fun fact! That will keep it from browning.
