Sugar-Free Lemon Bars
Growing up, there was (and still is) this adorable cafe a short walk from our house in San Francisco, Angelina's Deli Cafe. They had this classic, delectable lemon bar that was the size of your head and a powerful incentive for keeping two kids in line.
Determined to bring lemons bars back into our life, we got to work on a recipe that met all of our dietary needs without losing that wonderfully sweet, citrus-y flavor. After a series of Goldilocks-like attempts…too bland, too sweet, not lemon-y enough… we finally mastered a healthy, gut-friendly, gluten free, sugar free version of our childhood favorite that tastes just as good as the original thing. No joke. Even the almond flour crust tastes like classic short bread. Enter the perfect summer dessert that even the sugar loving dinner party guest is sure to enjoy.
Sugar-Free Lemon Bars
SERVINGS 16 Bars
INGREDIENTS
Crust
2 cups blanched almond flour
1/2 cup coconut oil (melted)
1/2 cup sugar free powdered sugar
Filling
1/4 cup coconut oil (melted)
1/2 cup fresh lemon juice
1/2 cup sugar free powdered sugar
5 large pasture-raised eggs
1 large egg yolk
1 1/2 tablespoon coconut flour
METHOD
Preheat oven to 180C/350F.
Line an 8 x 8-inch pan with parchment paper and set aside.
In a mixing bowl, combine all of the crust ingredients and mix well.
Transfer the mixture to the lined pan and press until evenly flat.
Bake for 15 minutes or until golden brown.
While crust is baking, prepare the filling. In a separate mixing bowl, mix the melted coconut oil, lemon juice, and powdered sugar.
Once smooth, add your eggs, extra egg yolk, and mix well.
Add the coconut flour and mix well.
Remove the crust from the oven and immediately add the filling.
Bake for 20-25 minutes or until the center is firm but still jiggles slightly.
Remove from the oven and let cool in the pan completely.
Once cool, refrigerate for at least two hours or until firm.
When ready to serve, dust the tops with extra powdered sugar.
Tips
To make this recipe sugar free and, in turn, zero glycemic, we use Lakanto Sugar Free Powdered Sugar. This is a monkfruit sweetener. The flavor gives these bars just the right sweetness profile you would expect from these bars.
Get a powdered sugar shaker to dust powdered sugar on top of your bars before you serve them. Not only does it look beautiful, but it helps you evenly distribute and control how much you add and where you add it.
