Green with Smoothie Envy

This gorgeous green, detoxifying beauty is inspired by the first recipe we ever tried from The Plant Paradox program; the "Green Smoothie" from the three-day cleanse. Packed with leafy greens, healthy fats, and ginger, this concoction is chock full of ingredients that promote cleansing and anti-inflammation.

 

Craving a little more fill and little more punch, our recipe adds more spinach and a lot more ginger to make it even more satisfying and flavorful. This baby makes for a delicious, satisfying breakfast or on-the-go snack during a busy work day. It’s sweet but 100% sugar free because it’s sweetened with Stevia, a natural, plant based sweetener. It’s also easy on the digestive track so an ideal way to break a fast on days that we intermittent fast. While fresh out of the blender is always better, we often make this first thing in the morning and store it away until we’re ready for our first meal of the day… or want something healthy handy to keep us from reaching for the chips.


 

Ginger Green Smoothie

SERVINGS 1 SMOOTHIE

INGREDIENTS

  • 1 cup of chopped romaine

  • 2 cups of spinach (or two handfuls)

  • 1/2 avocado

  • Ginger (3-4 tablespoons)

  • 3-6 drops liquid stevia

  • 1 handful of ice

  • 1 cup of filtered water

  • 1 sprig of mint with stem

METHOD

  1. No need to complicate this. Add all ingredients to your Vitamix (or other high powered blender) and blend on high until smooth.

  2. Drink immediately or store in refrigerator covered for breakfast or an afternoon snack.

Tips

  1. We use this Stevia to sweeten the smoothie because it has no artificial ingredients and because it’s in liquid form. The tincture allows you to slowly add drops and better control the intensity of the stevia flavor than the powder form. Warning. Stevia is very sweet. Less is often more. We have definitely ruined a few recipes by adding too much too fast and overdoing it.

  2. We debated whether or not to purchase a Vitamix for years. For that hefty price tag, would it would be worth it? We are thrilled to report it was hands down our best appliance purchase to date. We use it at least twice a day.
